Happy Friday <3
Happy Friday!
I have a couple of thoughts I am working on, but not enough time to fully develop them today. So I will give myself some space and grace to work on those better and just play a little catch-up with you for today.
It has been a great week weather-wise. Low humidity and cooler temps are making us all long for fall. I found some mums for $4.99 at Aldi’s and tore out the summer flowers that just never did love living on our front porch.
On Monday, I will put up the fall wreath that is probably due for retirement but will do for another season since I can’t find a replacement I like. Russ bought us a fun new mat and for once I am happy making plans for putting summer away and embracing autumn.
Lately I have been in a baking mood. So far we have enjoyed a Cherry Cobbler (yes…using canned cherries), a Lemon Tart (using a lemon curd from Stonewall Kitchen that I DO NOT recommend) and a Snickerdoodle Apple Dump Cake that is sooooo good.
So to wrap up our visit, I am going to pass along the recipe I got from Instagram with some notes. Because sharing recipes is fun.
Hope you have a great weekend and if you make the cake, let me know!
Apple Snickerdoodle Dump Cake
6 Cups tart apples, peeled and cut in small squares, she said 8 and sliced but photo showed chunks so that’s what I did (I used Granny Smith and 6 did the job)
1/3 cup brown sugar packed
1/4 cup sugar
1 tsp ground cinnamon
1/4 cup orange juice
1 Tbsp lemon juice
17.9 oz snickerdoodle cookie mix (used Krusteaz)
1/2 cup melted butter
1 cup coarsely chopped pecans or walnuts
350 degree oven. 11×7 pan, lightly coated with cooking spray.
Toss apples with sugars, cinnamon and juices.
Spread in pan. Mix cookie dough packet and cinnamon sugar packet from box and sprinkle over apples. Drizzle with melted butter – make sure you get all the topping moist – may have to push around with a spoon!
Top with nuts if using – we didn’t
Bake 35-40 minutes (mine took about 10 minutes longer but keep a watch on it!!!)
Serve warm with whipped cream or vanilla ice cream. We highly recommend the ice cream option! From @passionatepennypincher
Enjoy!
